Danish Dream Cake (Drømmekage fra Brovst)





Dear Friends,

Hello!!! I was being looking for different ones and I got an opportunity to do Danish cake as A cake originated from Denmark :)suggested by Meena and selected By Gayathri of Baking Eggless group and It was so exciting for me to do..I find it hard part is Eggs to replace.It is very challenging task for me to search and googled  about what to replace more eggs for! After got help from my friends most suggested are condensed milk,curd and baking soda..I want to add only one ingredient which can replace with eggs. Once I had made Yogurt cake and it was big success.So want to try out the main ingredient as "Curd/Yogurt"
It was very thrilling while making batter because I used all the ingredients as given without any changes.Only one thing to change is Eggs.I just loved it and it was an amazing taste and very soft and moist too.Everyone in my family had enjoyed a slice. It was a big success. Here is the recipe and Enjoy a slice of cake with your family and friends :)







Recipe Adapted from DianaDesserts


Here are the ingredients:

For the Cake:

  • 2 1/4 Cup All purpose Flour
  • 1 1/2 Tsp Baking powder
  •  1/4 cup Unsalted Butter
  • 3/4 Cup Milk
  • 1 Cup Homemade Curd
  • 1 1/3 Cup sugar
  • 1 Tsp Vanilla Extract

For Topping:

  • 1/2 Cup softened unsalted butter (Room temperature)
  • 1 1/3 cup Dessicated Coconut flakes
  • 1/4 Cup Milk
  • 1 1/4 cup Light brown sugar

Method:

Step by Step wise Picture.

Preheat the oven to 350 F or 180 C.Line a parchment paper into the greased Square 9 Inch pan.Grease it on the paper and keep aside.

Step 1:
In a saucepan,Add the better along with milk and keep stirring till it melts.Turn off the heat and keep aside.

Step 2:

Add the flour and baking powder and a pinch of salt if you want. Sieve it into a bowl.Keep aside.

Step 3:

Add the curd,sugar and vanilla extract.Mix it well until it is smooth.

Step 4: 

The Wet mixture is ready and add the melted butter milk mixture to it and mix well.

Step 5:




Add the flour in three additions to the wet mixture until it is well incorporated.Make sure that don't over mix.

Step 6:

Cake Batter is ready 

Step 7:

Transfer  the cake batter into the greased baking pan. Bake it for about 15 to 20 minutes or until the tooth pick comes out clean.

Step 8:

Cake is baked fresh from the oven.

Step 9:

For the topping ingredients, Mix all together to get creamy covered coconut flakes.

Step 10:

Apply the topping mixture immediately on the baked cake.evenly

Step 11

Reduce the oven temperature to 325 F.Keep the pan onto the top inside the oven for about 10 minutes or until it is brown in color looks like caramel color. Allow it to cool before slicing.

Step 12:

Slice it and serve it

Dates Laddoo

Dear Friends

Hope you all had a nice weekend :) Well I was having lots of dates and would eat it daily. I want to try it differently and idea struck me by seeing my dear friend Divya. It made me to do it. Am scared to make balls because it is first time to make wet mixture into balls.Dates is very healthy one and goes great with nuts too. I gave dates ladoo to my family and friends and They liked it too. You can try it :)

Ingredients

  • 1 Cup chopped Dates
  • 1/4 Cup almonds coarsely chopped
  • 1/2 Tsp Cardamom powder
  • 1/4 Tsp Cinnamon powder
  • A pinch of Nutmeg powder and ginger powder.
  • Few Tsp of milk or ghee to make into balls.

Method:

Step by step wise picture as given:

  1.  Take a chopping board chop all the dates into bited size chunks.Put it into the mixie or food processor
  2. Add spices to it and pulse it once for few seconds
  3. Take a cooking pan preferably non stick,put the dates mixture on medium low heat.Mix well by adding few tsp of ghee or milk till u able to make balls.
  4. Switch off the heat and apply both sides of your hand with smeared ghee if u want.Make into small balls once it is warm or hot enough to make it.
  5. Dates laddoo is ready to serve.
  6. Store it in an air tight container. 
Serving Options:

I made about 17 balls :) Goes best for kids :)

Chocolatey Brownies

Here is the brownies dessert who is being loved by everyone who eats it along with icecream or whipped cream.It tasted so good :)

Here is the recipe:




Ingredients

  • 1/2 cup (1 stick) butter or margarine , melted
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • eggs
  • 1/2 cup all-purpose flour
  • 1/3 cup Cocoa Powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts

Method:

  1. Heat oven to 350°F. Grease 9-inch square baking pan or Aluminum square foil pan.
  2. Stir together butter, sugar and vanilla in bowl till it gets creamy. Add eggs; beat well with spoon. Whisk together flour, cocoa, baking powder and salt and sieve it; gradually add to egg mixture, beating until well blended. Stir in walnuts, if desired. Spread batter evenly in prepared pan.
  3. Bake 20 to 25 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack.
  4.  Cut into squares.
  5. Serve it with Ice cream or whipped cream.

Leche Flan

Dear Friends
 

Introduction:

Leche Flan is popular in worldwide and In India it is also known as Caramel custard. It is the best dessert for all occasions.The main ingredient are eggs and milk with caramel syrup on top.It tastes so soft and melting in your mouth.It is plain custard where sugar such as light brown or white to cook till you get the brownish syrup. It is poured into the mold before pouring the custard flan batter.It is cooked in  the oven in a water bath. It is best served with the caramel syrup.





Preparation List:

Ingredients:

For Caramel Syrup

1 Cup Light Brown Sugar or White sugar
¼ Cup Water
For Custard Flan
8 Egg yolks only
1 Can Sweetened Condensed Milk
1 Can Evaporated Milk or Fresh milk 



Method:

For Making Caramel Syrup
In a heavy bottomed nonstick saucepan, add the brown sugar and water to it on medium heat. Allow the sugar to get dissolve.
Never stir it with spoon. Allow to swirl the pan.
Once it boils, the color will change slowly approximately 7 minutes.
It starts to thicken till you get an amber golden color. Turn off the heat.
Pour the caramelized sugar to the 6 inch or 8 inch round pan and coat well on the bottom and the sides too.
Set aside.

For Making Custard Flan
  • Preheat the oven to 350 F or 180 C.
  • Put water to the sauce pan and allow boiling separately.
  • In a big bowl, Add egg yolks and whisk it.
  • Meanwhile whisking the egg yolks, add fresh boiled milk or evaporated milk to it.
  • Finally add condensed milk to the egg milk mixture. Blend well by using whisk or blender.
  • Do not over mix to avoid bubbles.
  • Strain the mixture into another bowl.
  • Pour the egg custard mixture into the caramelized 6 or 8 inch cake pan or ramekins and cover the top with an aluminum foil..
  • Take a boiling water and pour on to the deep rectangular baking tray
  • Place the round cake pan on the water bath of the baking tray. The water level should rise so that it has reached the half way to the sides of the round cake pan.
  • If the water level does not rise, then pour a boiling water carefully until it is risen up the halfway of the sides
  • Also be careful not to splash the water to the round cake pan.
  • Bake it for about 30 to 40 minutes or until the flan is done while the tooth pick comes out clean after removed foil.
  • Allow it to cool on the cooling rack.
  • Once cooled, invert the pan on the serving plate carefully.
  • Garnish it with whipped cream or sliced or whole strawberries on the top of the leche flan.
  • It will flow the caramelized sugar all over it and slice it

    An Apple Pie

    Dear Friends

    It its one of our favorite pie because it is crunchy and flavorful of apple with spices.It is famous all over the world wide. It has double pastry crust on the top and bottom with apple filling inside. Thanks to Swathi for selecting Pie theme and gayathri who suggested it :) Here is the recipe and enjoy it :)

    Ingredients:

    For Double dough Crust :
    • 1 3/4 cups  (260g) All purpose flour
    • 1/2 cup (75g) Self-raising flour
    • 1/2 cup unsalted butter, chilled, cut into small pieces
    • 1/3 cup (75g) Sugar
    • 1 Tbsp Milk
    • 1/4 Tsp Salt 
    • Cold water for kneading
    For Filling:

    • 8 large Granny Smith apples( I had used 6 )
    • 3 Tablespoons Unsalted butter
    •  1/4 cup Sugar and 1/4 cup light brown sugar
    •  1 /2 Tsp ground cinnamon
    •  1/4 tsp ground cloves
    • A pinch of nutmeg powder

    Method: Preheat the oven to 350 F or 180 C once you made the filling.

    Step by step wise process picture of apple pie :


    1. Sift all the dry ingredients such as all purpose flour,self-rising flour,sugar,salt.
    2. Add cold cubed butter to it
    3. Knead to make coarse crumbs by adding milk and water
    4. Knead well  till it gets the right consistency as shown in the picture.
    5. Divide the dough into 2 halves.
    6. Wrap the 2 halves and keep it in the refrigerator for about 30 minutes or till it is firm.
    7. Slice the apples lengthwise..Immediately toss the apples with lemon juice in the bowl to avoid discoloring.
    8. Take a medium sauce pan and place it on medium heat,put both sugar and butter to it and let it melt completely.
    9. Sprinkle the spices such as nutmeg.cloves and cinnamon powder on to the apples.
    10. Toss well.
    11. Once poured melted butter sugar mixture into the apple mixture bowl. Let it sit for about 10 minutes.Take a saucepan that you used for melting butter. Pour the apple infused butter melted sugar mixture on to the colander.Let it sit till it is absorbed.
    12. Take a cooled 1st dough and place it on the counter top dusted with flour.Make a circular dough by placing the 9 inch pie pan.
    13. Invert the pan on the counter top by placing the circular dough.press it firmly with your index finger and thumb all around the sides as shown in pic.
    14. Prick the holes on the dough by using fork slightly.This will help the apples to steam.
    15. Place the apple spices filling on the dough pan. You can pour the juice infused butter extract to it.
    16. Take out the 2nd dough and make a flat dough about 1 inch.
    17. Lift out the 2nd flat dough by using rolling pin and place it on the apple pie pan gently
    18. Press together top and bottom of the dough.Seal out the edges by using your index finger and thumb to make design.
    19. Take a pairing knife and cut four small air vents on the center. Apply 2 tablespoons butter or egg wash(1 egg with little water and beat gently). Sprinkle the top with sugar if you wish.
    20. Bake it for about 30 to 40 minutes or the top crust is golden in color.
    21. It is golden in color 
    22. Transfer the pan to the cooling rack.
    23. Once cooled or warm,slice it
    24. Garnish it along with your choice of whipped cream or ice cream.I had designed apple carved heart and  it is just for show apple theme design :)
